Eberhardt is president of Dining Associates, which operates hotels, bed & breakfasts, and restaurants in Central New York and the Finger Lakes region. He is owner of the Sherwood Inn in Skaneateles, N.Y., and operates the lodging establishments Packwood House and Village Inn; Patisserie (artisan breads and fine pastries), Blue Water Grill and Kabuki restaurants in the Village of Skaneateles; Hobbit Hollow Farm Bed & Breakfast overlooking Skaneateles Lake; and the historic Colgate Inn in Hamilton.

Eberhardt has lectured at the University of Central Florida's Rosen College of Hospitality Management; and at the Cornell University School of Hotel Management, where he also serves on the Assessment Review Board for the Master's Program.  As a member of Cayuga Hospitality Advisors, he consults for the industry worldwide.  He has also been president of the Skaneateles Area Chamber of Commerce, a member of the United States Air Force Academy Review Board, a member of the Executive Committee of WCNY (public television and radio), and served as a board director for the Skaneateles Festival, Syracuse Stage Theatre, Syracuse Convention and Visitors Bureau, Syracuse Chiefs baseball team and the Boy Scouts of America’s Hiawatha Seaway Council.

Eberhardt earned a bachelor's degree in business management at Syracuse University. He then began working in the hospitality industry, mentoring under several respected industry professionals, among them a graduate of the Cornell University School of Hotel Management.

Since 1974 Eberhardt has owned or operated 17 inns and restaurants, catered at the Winter Olympic Games in Lake Placid, and managed The Wine Garden for New York wineries at the New York State Fair.
